Those of you sneering about the instant mashed potatoes I eat while camping are missing an icon in American Cuisine. I read at eHow that,

“Instant potatoes have been a staple in many kitchens for decades. They are one of the best-selling items in the grocery because they are inexpensive, very easy to prepare and have a long shelf life. In recent years, the flavor has improved and instant potatoes taste more like the fresh, made-from-scratch variety. There are many flavors available, but you can create a side dish that tastes homemade using some creativity with spices and other items found in your kitchen.”

See? I am not the only one scarfing them down. For those of you who want to share in my gastronomic adventures, try this recipe, which I developed while camping on Kelleys Island.

Mashed Potatoes Island Style


  • 1/2 bag broccoli slaw
  • 1.5 cups water
  • 1/2 cup instant mashed potatoes
  • 2 TBS powdered milk
  • dash salt
  • parmesan cheese


  • Place broccoli slaw in small sauceman, with a tiny bit of water. The idea here is simmer/steam until softened a bit, set aside
  • Heat water, add powdered milk, salt, and instant mashed potatoes. If too thick or too thin add more water or more potato flakes
  • Stir in veggies, top with tons of parmesan or other cheese
  • Scarf
